Hello.  I'm Mathilde, and because I love cooking and making magical brews, I got my own section here in Trollhufsa.  Here I would like to collect recipes of my own.  From time to time my friends send me recipes, which I also would like to include in my own space here on the Internet.

1/2 a pound of marzipan

some melted chocolate

some eatable decorations

 

How to make

Make the marzipan in to balls/as many as you can.

Then melt some chocolate using boiling water.

After that dip the marzipan balls in the chocolate one by one.

Then while the chocolate is still runny put on your

decorations.

 

 

Orange Bunt Cake

Ingredients:
  8 large eggs separated into whites and yolks in different bowls
  2 separate measures of 2/3 cup of granulated sugar
  1 teaspoon cream of tartar
  1 teaspoon grated finely orange peel
  ½ teaspoon salt
  ½ cup orange juice (made from concentrate okay)
  1 cup sifted cake flour

Beat yolks till thick and add first measure of 2/3 cups sugar until blended.

Mix orange juice and peel together

Add flour to yolk sugar mixture blending in juice mixture until mix is smooth with a creamy appearance. (Set aside)

Beat egg whites, cream of tartar, and salt till fluffy then add second measure of 2/3 cups sugar until stiff peaks form.

Slowly blend two mixtures together until smooth and pour into ungreased 10 inch bunt pan (do not fill pan to top, use your best instincts but no less that ½ inch should be left for upward expansion, (set any excess aside for a cu cake or two if have any)
Pre-heat oven to 325 degrees. Place bunt pan on the center of a cookie sheet and place in middle level of the oven.  Bake for 1 1/4 hours checking after an hour depending on altitude and your oven.

When done, use a cookie rack to remove the cake from the pan to cool.

<Optional addition: While cake is cooling mix up a package of your favorite instant pudding.  Chocolate, lemon, coconut (or for a particularly trollish 'fish eye' look) tapioca. When properly chilled pour into the center of the cooled cake but do not overflow center hole>

Place cake on a plate that extends about 2 inches from the cake all around

Frost cake carefully using the frosting you prepared earlier. If you used pudding carefully cover the top of the pudding with a layer of frosting after you have frosted the entire surface of the cake first.  Sprinkle any remaining or additional coconut on the top and decorate with fresh orange wedges as desired. 

Garnish with a ring of peeled orange slices and sprigs of mint as desired. Serves 10 humans or 5 hungry trolls.

Additional ideas: Before baking cake suspend a 'hidden treasure' for birthday guests to find such as whole almonds, candied fruit or other tasty items.

Orange Coconut Troll Birthday Cake

Creamy Orange-Coconut Frosting

 Ingredients:
  1 one-pound package confectioners sugar-sifted
  1 ½ cup of whipping or light cream
  1 ½ teaspoon of vanilla
  2 teaspoons finely grated orange peel
  1/4 to 1/3 cup grated coconut
  6 tablespoons of butter

Place all ingredients except cream and coconut in a bowl. Blend lightly gradually adding the cream until creamy/fluffy. Blend in coconut until mixture has a slightly textured feel (set aside any leftover coconut if you have any for later.)

 Additional components: (For garnish)
  Two peeled oranges sliced thinly
  Five to six 2 inch fresh mint strips
  Additional grated coconut as desired

Hot or Cold Troll Wassail

* One half Gallon of Apple Cider or Apple Juice
* 3 to 4 cups of Orange Juice
* 1 to 2 cups water
* 1/2 cup sugar
* 3/4 to 1 teaspoon cinnamon
* 1/16 teaspoon nutmeg
* 1/16 tea spoon cloves

Mix all items in a large pot on the stove or in a large crock pot. Heat then let steam and brew for 90 minutes. Serve Hot with a stick of cinnamon. (It may also be simmered for 20 to 30 minutes over an open fire. Caution, do not place pot in the fire) It may also be iced after brewing and served with a sprig of spearmint as a garnish.

Troll Cream 

 

 Balder loves Troll-Cream, and when Askeline makes it for him, it’s like Christmas in Trollhufsa.

 

Therefore he gives you a very good recipe, so you can try it yourself.

 2 cups (5 dl) lingonberries, or
1/2 cup (1 1/4 dl) lingonberry jam
2/3 cup (1 1/2 dl) sugar
2 egg whites, from large eggs

 

Use an electric mixer to make the magical troll cream. Combine all ingredients in a mixing bowl and beat until the volumes quadruples (about 15 minutes). If you are using lingonberry jam, omit sugar. Serve in a crystal dessert bowl sprinkled with a few lingonberries. If available, add a few mint leaves. Cookies and/or waffles are great accompaniments, or serve in Crisp Wafer Cups.

Askeline's  fabulously good Christmas cake!

 

2 dl water (preferably dew from spring plants)

1 dl reindeer milk

500 g house-elf-oats

300 g wheat

4 Tbsp. Christmas spirit

100 g heather honey

1 pinch magic

 

Mix everything together and let the dough rise for 2 hours. Bake for half an hour. Cover the whole cake with troll whipped cream and sprinkle the top with hazelnut flakes, dried blueberries and glittering troll dust.
